Strawberry Salsa

Description

I eat it with a spoon. It’s also great as a topping!


Ingredients

  • 1 lb fresh strawberries, washed and diced
  • 1/4 C blood orange juice*, freshly squeezed
  • 2 tbsp agave nectar, to taste
  • 2 tsp lime juice, freshly squeezed
  • 1 tsp minced mint leaves


Instructions

  1. In a mixing bowl, stir together the strawberries, mint, blood orange and lime juice. Once all the berries are coated, drizzle in the agave nectar. Toss to distribute throughout the salsa. Give it a taste, and add more agave as desired. Cover and refrigerate for 2 hours, to allow the flavors to marry. Dassit!

Notes

  • Regular orange juice is a fine substitute. Just use freshly squeezed!
