Honey Roasted Mixed Nuts

Ingredients

Honey Roasted Nuts:

  • 1 lb roasted nuts, unsalted
  • 1/3 C honey
  • 2 tbsp salted butter
  • 2 tbsp dark brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp Kosher salt, to taste

Optional Sugar Coating:

  • 1/4 C turbinado sugar
  • 3 tbsp granulated sugar
  • 2 tsp fine sea salt


Instructions

  1. Preheat oven to 325°F and line a half-sheet sized sheet pan with parchment paper.
  2. On the stove top – or in the microwave – melt together the butter, honey, brown sugar, vanilla, and kosher salt. Whisk until a smooth, syrup sauce forms.
  3. Pour your nuts into a large mixing bowl, then pour the hot syrup all over them. Use a wooden spoon or silicone spatula to stir well, ensuring all the nuts get coated evenly.
  4. Pour the nuts out onto the prepared baking sheet. Spread them into a single, even layer as best you can. Roast the nuts in the preheated oven for 15 minutes.
  5. After 15 minutes, remove the pan from the oven and use a large spatula to toss them, pushing the ones around the edge to the center of the pan and spreading them out. This will help them all roast evenly.
  6. Return the pan to the oven and continue roasting for another 10–15 minutes, until they have noticeably darkened in color, and are very fragrant. Make the sugar coating in the meantime, if using, by stirring them the sugars and salt together in a small container.
  7. Remove the nuts from the oven. Give them another stir and spread them back out. If your pan isn’t large enough to spread them out into a single layer with a bit of space between them, prepare a second sheet pan with parchment paper, and transfer a portion of the nuts to that.
  8. Spread the nuts out evenly, and separate them as best you can so the glaze sets and doesn’t glue them together. Sprinkle a few pinches of the sugar coating over the top of all the nuts. Let cool undisturbed for 5 minutes, then stir them one more time. Spread them out again, sprinkle more sugar coating, and leave them alone until cooled – about 30 minutes.
  9. As soon as the nuts have cooled and hardened, transfer them to an airtight container, breaking apart any large clusters that have stuck together as you go. Once they are in the container, sprinkle a few more pinches of sugar coating in, affix the lid, and give them a shake. Dassit!
